Saison Americaine is a foudre-aged (pronounced foe-der) Saison. This means that the beer is aged in a big wooden vat. Therefore, more acidity is achieved with the Saison Americaine through the process of wood aging together with slightly lower hopping rates. The taste is a little more tart or acidity than other Saisons that Jester King makes such as the Le Petit Prince, Noble King or Biere de Miel. In Jester King's opinion, this American Saison is a little more acidic than the traditional, European counterparts through this method of wooden vat aging.
Jester King beers are fermented with wild yeast which makes each release slightly different in the bottle. The beers can be kept for a couple of years to further age in the bottle.
